Fruit trees should not be pruned, it is only strongly recommended.
Gardening is not an exact science, here is what I do, you will apply the variants that seem good to you.
At the moment, (February) except for periods of frost, you can tackle apple trees, quince trees, pear trees, berries (blackcurrants, currants, etc.), vines.
I prune apricot, peach, nectarine and nectarine trees when flowering ends.
I don't touch plum and cherry trees, nor walnut trees.
I strongly believe that green pruning is preferable because the Healing happens quickly when the tree is in full sap.
I only prune wood that is one year old, never older. Too bad if I forgot.
On the other hand, I practice a lot of space between the branches.
