1 melon, halved and seeded
1 honeydew melon, halved and seeded.
1 seedless watermelon, halved
1-1/2 cups orange juice
1-1/2 cups pineapple juice
3 tablespoons of honey
12 lemons
mint to decorate
Use a small melon rounder to carve cantaloupe melons, honeydew melon, and watermelon. Place each melon in its own bowl and fill with 1/2 cup orange juice, 1/2 cup pineapple juice, and 1 tablespoon honey. Stir, then place the plastic wrap-covered containers in the refrigerator to chill for a minimum of 1 hour.
Meanwhile, slice off ends of lemons, then cut each one in half. By cutting off the ends, the lemon bowl will be able to sit on a surface. Using a paring knife to cut, remove the fruit inside making sure not to cut the skin.
Fill each lemon with melon assortment and garnish with mint to serve.
